  1. Cover eggs with cold water in small saucepan and bring just to a boil over high heat.
  2. Cook 1 minute.
  3. Remove from heat, cover pan and let stand 15 minutes.
  4. Drain and rinse under cold water or place in bowl and refrigerate until ready to use.

Can be made 1 day in advance and refrigerated in the shell.

One issue we have with the avocado egg salad is the browning of the avocado. If you’ve tried all the hacks that are out there, you’ve probably learned one important lesson: none of them really work. Unless you make your avocado egg salad sandwich and eat it right away, it discolors and doesn’t really look edible.

Yes, the acidic lemon juice and the coverage of the mayo should help a little to keep the oxygen in the air from interacting with the enzyme polyphenol oxidase in the avocado. But once you cut it into cubes for your sandwich, there’s a whole lot of surface there to brown!

The best way – and perhaps the only way – to slow down the browning process is to blanch the avocado. This process is taught by Raymond Blanc. It’s very precise. You blanch the avocado for exactly 10 seconds and immediately put it in an ice water bath to stop the cooking. This kills the enzyme but doesn’t affect the avocado itself.

But — after this process your avocado will stay a beautiful green for at least 4 hours!

Description

Ingredients

Scale

1/4 c mayonnaise

1 tsp lemon juice

1/2 tsp dijon mustard

2 Tbsp cilantro, chopped

6 hardboiled eggs, chopped into cubes

1 large ripe avocado, chopped into cubes


Instructions

Combine in a bowl mayonnaise, lemon juice, mustard and cilantro. 

Gently stir in avocado and eggs. 

If you blanched your avocado, chill for 20 minutes. If not, serve immediately on bread or crackers.
