Flay impressed with his culinary skills even at the age of 17.

Bobby Flay was a cook at the one of Broadway’s top hangouts for working actors, Joe Allen’s at the age of 17, making salads.

His father was a partner in the restaurant and got Flay the job after he dropped out of high school at grade 10.

Joe Allen himself was so impressed by Bobby’s culinary talents that he paid Flay’s tuition for The French Culinary Institute.

Flay was a member of the first graduating class in 1984 and soon worked at the famous Buds and Jams with restaurateur/owner (and James Beard winning chef) Jonathan Waxman. This is when he discovered the sweet-heat of Southwestern ingredients and Cajun cuisine. See Waxman’s California Salsa Verde recipe.

Flay caught the attention of restaurateur Jerome Kretchmer, who was looking for a southwestern-style chef. The rest, as they say, is history. Together they built an empire of restaurants with different cuisine.
