  1. Cover eggs with cold water in small saucepan and bring just to a boil over high heat.
  2. Cook 1 minute.
  3. Remove from heat, cover pan and let stand 15 minutes.
  4. Drain and rinse under cold water or place in bowl and refrigerate until ready to use.

Can be made 1 day in advance and refrigerated in the shell.

Classic Egg Salad Sandwich

The classic egg salad sandwich, just like mom used to make. The perfect comfort food.


  • 6 large hard-boiled eggs, peeled

  • 1/4 cup mayonnaise

  • 1 tablespoon lemon juice

  • 1 tablespoon yellow mustard

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 cup finely chopped celery

  • 1/4 cup thinly sliced green onions

  • 8 slices rustic wheat bread

  • 4 Bibb lettuce leaves


  1. Chop eggs.

  2. In medium bowl, mix mayonnaise, lemon juice, mustard, salt and pepper. Add chopped eggs, celery and green onions; mix well.

  3. Refrigerate, covered, to blend flavors.

  4. Serve on wheat bread with lettuce leaves.
