This is banana bread for one: 1 banana, 1 person enjoys a few moments of banana bliss.
It’s fast, it’s easy, it’s made in a mug. In just 3 minutes of microwave magic you have your own personal mug cake. What’s not to love?
- Cooking spray
- 3 Tbsp flour
- 3 Tbsp brown sugar
- 1/8 tsp salt
- 1/8 tsp baking powder
- 1/8 tsp baking soda
- 1 egg
- 1/4 tsp vanilla extract
- 1 Tbsp butter, melted
- 1 Tbsp milk
- 1 ripe banana, mashed (reserve a couple thin slices for decoration on top)
Spray a large microwave safe mug with cooking spray.
Whisk flour, sugar, salt, baking powder and soda in the mug with a fork or small whisk.
Add egg with dry ingredients and stir until combined. Mix in vanilla, melted butter, milk and mashed banana.
Microwave for 3 minutes. It is done when dry on the top. (Won't be browned.)
Let it cool enough to handle. Top with banana slices.
