  1. Cover eggs with cold water in small saucepan and bring just to a boil over high heat.
  2. Cook 1 minute.
  3. Remove from heat, cover pan and let stand 15 minutes.
  4. Drain and rinse under cold water or place in bowl and refrigerate until ready to use.

Can be made 1 day in advance and refrigerated in the shell.

To cut a lot of hard boiled eggs quickly and easily for her egg salad, she places a cooling rack over a bowl and presses her eggs through it.

It makes long, thin strips of egg as well as pieces.

Farmer’s Egg Salad

Description

Egg salad sandwich recipe with garden fresh vegetables & pickle juice. If you want to add a touch of sweetness, use sweet pickle juice. If you want a little tang, use dill pickle juice.


Ingredients

  • 6 large hard-boiled eggs, peeled

  • 1/4 cup mayonnaise

  • 1 tablespoon pickle juice

  • 1 tablespoon yellow mustard

  • 1/4 teaspoon salt

  • 1/2 cup finely chopped celery
  • 1/4 cup thinly sliced green onions

  • 3 – 4 radishes, thinly sliced
  • sprinkle of fresh dill

  • leaf lettuce

  • 8 slices rustic multi grain bread


Instructions

  1. Chop eggs. 

  2. In medium bowl, mix mayonnaise, pickle juice, mustard, and salt. Add chopped eggs, celery and green onions; mix well.

  3. Refrigerate 30 minutes, covered, to blend flavors and make the egg salad a nice texture.

  4. Serve on bread with lettuce leaves.
