Meatloaf Cupcake Makes Dinner a Dessert

Our Meatloaf Cupcakes are a quick, easy meal and will be sure to put a smile on everyone’s face.

They’re fun and oh-so-easy to do.

Meatloaf Cupcake DIY Instructions

You will need:

  • round mini-meatloaf (baked in muffin pan)
  • mashed potatoes – 1 per person
  • milk
  • frozen carrot & peas mix
  • can of turkey gravy

Instructions:

  1. Preheat oven.

    Set oven to 350°F to preheat for meatloaf while preparing potatoes.

  2. Boil the potatoes and vegetables.

    Peel and put potatoes on to boil. Cook vegetables – leave them in the hot water to keep warm until you need them. Move on to next step. Estimate one potato per snowman.

  3. Prepare your favorite meatloaf recipe.

    (If you need an easy one, try Momma McEachern’s Meatloaf recipe.) Put meatloaf mixture in muffin tin and bake for 20 minutes.

  4. Mash the potatoes.

    Drain and mash the potatoes. Add milk little by little until potatoes are a playdough consistency.

  5. Create your cupcake.

    Place mini-meatloaves on individual plates. When mashed potatoes are cool enough to handle, roll into 2 balls just like you would when playing with play dough with your kids. One ball should be slightly smaller. Slightly squish largest ball so its a little flattened and place on meatloaf. Ditto for small ball, but add a swash at the top that looks like frosting just off the knife. (See photo.)

  6. Add vegetable sprinkles.

    Push carrot cubes and peas randomly into mashed potatoes to appear to be sprinkles.

  7. Pour on gravy and serve.

    Spoon warmed gravy onto meatloaf top, allowing it to drip down to plate. Take your time, do it little by little. With this, less is more. You want it to look like a caramel sauce on top. Serve immediately. (Can put in 200°F for a few minutes to keep warm while arranging other snowmen.)
