They are so chocolatey they’re a truffle. They’re a Christmas goodie, so they have peppermint. But they’re a cookie so you don’t have to feel *guilty*. Peppermint Truffle Cookies are our favorite Christmas indulgence.
These are extra special and extra chocolatey because they have a Hershey’s kiss in the center. Who do you want to send a kiss?
Of course, these peppermint truffle cookies can be served anytime, not just during the holidays.
To make them for your party, roll them in sprinkles that match your party theme colors.
Or, roll them in cocoa powder for more chocolate and so it will go with everything!
There’s nothing that says “I love you” more than sharing your chocolate truffles with someone you adore.
Especially with a kiss in the middle. 💋
Merry Christmas. 🥰
Peppermint Chocolate Truffle Cookies
Truffle cookies almost too good to share. And way too easy to make!
- 8 oz bittersweet baking chocolate
- ½ c butter
- 1 c sugar, divided
- 1 egg
- ½ tsp McCormick Pure Peppermint Extract
- 2 c flour
- 36 milk chocolate kiss-shaped candies, unwrapped
Heat oven to 350° F.
In large, microwavable bowl, heat chocolate and butter on high 1-2 minutes, or until butter is melted. Let stand 10 minutes to cool slightly. Add 1/2 cup sugar, egg and peppermint extract. Beat with electric mixer on medium speed until well blended. Gradually beat in flour on low speed until well mixed.
Shape dough into 1-inch balls. Press chocolate candy into center of each ball, forming dough around candy to enclose it. Roll in remaining sugar to coat. Place 1 inch apart on greased baking sheets.
Bake 9-11 minutes, or until cookies are set. Cool on baking sheets 5 minutes. Remove to wire racks; cool completely.
