Jackfruit is the latest trendy food, especially as a meat replacement for vegans and vegetarians. The jackfruit is a fruit, a relative of the fig, mullberry and breadfruit. It grows on a jack tree native to southern India, Brazil, Mexico, Africa & the rainforest in Malaysia.

When picked early, it has a neutral taste so can be used in recipes with a sauce with success, like BBQ sauce for a vegetarian pulled pork alternative. (It has the consistency of chicken when green.) At this stage you can use it in any meat recipe such as tacos and burritos, chili con carne, and stew.
It is time consuming to slice & remove the pits in a green jackfruit, and it has a sticky white resin that stains. Most people purchase canned or refrigerated pouches of green jackfruit at specialty grocery stores. Just rinse and then use in your recipe.
It can grow to 80 lbs in weight, but the average ripe jackfruit is around 40 lbs.
Ripe jackfruit tastes sweet & fruity. Eat it chilled as a fruit dessert, after removing the skin and the seeds.


Vegan Peanut Butter Jackfruit Chili
Ingredients
- 2 tsp oil
- ½ large white onion, chopped
- ½ green bell pepper, chopped
- ½ red bell pepper, chopped
- 2 garlic cloves, chopped
- ½ tsp salt
- 1 tsp cumin
- 1 tsp chili powder
- 1 Tbsp tomato paste
- 1 can crushed tomatoes
- 1 can whole tomatoes
- 2 c water
- 1 can red kidney beans, drained and rinsed
- 1 can green jackfruit, drained and chopped
- ¼ c peanut butter
- cornbread ((optional))
- tortilla chips ((optional))
- cinnamon rolls ((optional))
Instructions
- Heat large, heavy-bottomed pot over medium heat. Add oil, onion and peppers; cook 3 minutes, stirring often.
- Add garlic, salt, cumin, chili powder and tomato paste, stirring to coat. Cook 1-2 minutes, stirring constantly.
- Stir in crushed tomatoes, whole tomatoes, water, kidney beans and jackfruit; bring to boil then reduce heat to medium-low. Simmer 25-30 minutes.
- Stir in peanut butter and simmer 5 minutes.
- Serve with , tortilla chips or cinnamon rolls, if desired.
